SIP Distilling Co is a New Zealand craft distillery dedicated to producing premium small-batch spirits with a focus on quality, creativity, and flavour. Based in Auckland, our distillery brings together traditional distilling techniques and a modern approach to spirit making.
From gin and cocktails to immersive distillery experiences, everything we produce is crafted with care and attention to detail. Our goal is to create spirits that are enjoyable, approachable, and designed to be shared, whether that’s in the glass, at the distillery, or through hands-on experiences.
A Modern New Zealand Distillery.
SIP Distilling Co began with a simple idea, sharing good gin with good people. Our name is a nod to where it all started: sipping gin with family and friends at a barbecue, enjoying the connection that great spirits can create.
What began as a passion project in a small garage soon grew into something more. After discovering a shared love for distilling, Caci and her partner spent years experimenting with recipes, refining techniques, and producing countless small batches. Over five years of hands-on learning and trial led to the decision to turn that passion into a full-scale distillery, and SIP Distilling Co was born.
Driven by curiosity and a commitment to quality, Caci is largely self-taught but also pursued formal distilling courses to deepen her understanding of botanicals, distillation methods, and the chemistry behind crafting premium spirits. In 2022, the distillery took a major step forward with the acquisition of its first 100-litre copper column still, marking the transition from small-scale experimentation to professional production.
Since then, SIP Distilling Co has continued to grow, earning awards for its spirits and building a reputation for creativity, flavour, and craftsmanship. Today, the distillery produces small-batch gin, cocktails, and immersive distillery experiences, all rooted in the same values that sparked it from the beginning: quality ingredients, thoughtful distillation, and spirits made to be shared.
Alongside our spirits, we offer immersive distillery experiences, including gin making workshops in Auckland, where guests can step into the role of distiller and explore flavour, botanicals, and craft firsthand.
